Ingredients
1 lb Chicken breast cubed
3 Tbsp Santa Fe Smoky Spice
1 ½ C Bell Peppers assorted
1 Onion (white or red)
2 C Chicken stock
1 C Tomato paste or puree
2 tsp Salt (sea is best)
1 ½ Tbsp Lime juice
1 ½ Tbsp Tequila optional
1 ½ Tbsp Olive oil
Preparation
Pressure Cooker
1. In a pressure cooker set on sauté, then add the oil and brown the chicken.
2. Once the chicken is browned, pull the chicken out and add the onions and peppers, lightly cook the vegetables then add the rest of the ingredients.
3.On the rack of the pressure cooker place the chicken back in and cook for 20 minutes.
4.Serve and enjoy!
Vegetarian Option
Substitute vegetables for chicken (cauliflower, carrots, broccoli, mushrooms, radishes, parsnips, squashes)
