Ready in 45 minutes to an hour
Serves 4 people
Ingredients
- 1 ½ Tbsp Olive oil
- 1 lb Pork shoulder or loin
- 3 ½ Tbsp Santa Fe Smoky Spice
- 1 ½ C Red Peppers (diced)
- 1 C Onions (diced)
- 2 C Chicken stock
- 1 C Tomato paste or puree
- 2 tsp. Sea salt
- 1 ½ Tbsp Lime juice
Preparation
- Set the pressure cooker to sauté. Add the oil and brown the pork.
- When the pork is browned, remove it and add the onions and peppers. Lightly cook the vegetables and add remaining ingredients.
- Place the pork back onto the rack of the pressure cooker and cook for 45 minutes.
* If not using a pressure cooker, follow the same directions and add ¼ C more stock to the pot. Cook on low for about an hour.
