Santa Fe Smoky Pork

Ready in 45 minutes to an hour

Serves 4 people

Ingredients

  • 1 ½  Tbsp      Olive oil 
  • 1 lb                   Pork shoulder or loin                     
  • 3 ½ Tbsp Santa Fe Smoky Spice                
  • 1 ½  C           Red Peppers (diced)
  • 1 C                    Onions (diced)
  • 2 C                   Chicken stock
  • 1 C                    Tomato paste or puree
  • 2 tsp.              Sea salt
  • 1 ½ Tbsp  Lime juice

Preparation

  1. Set the pressure cooker to sauté. Add the oil and brown the pork.
  2. When the pork is browned, remove it and add the onions and peppers. Lightly cook the vegetables and add remaining ingredients.
  3. Place the pork back onto the rack of the pressure cooker and cook for 45 minutes.

* If not using a pressure cooker, follow the same directions and add ¼ C more stock to the pot. Cook on low for about an hour.
