Ingredients
¼ C Vegetable oil
¾ C Onions – small dice
¾ C Zucchini – small dice
¾ C Yellow Squash – small dice
¾ C Chayote – small dice
¾ C Green peppers – small dice
¾ C Red peppers – small dice
¾ C Yellow peppers – small dice
(2) 15 oz Cans of hominy
32 oz Vegetable stock
5 T Southwest Poblano Spice
Preparation
Stove top
1. Heat a 10” pan over medium high heat and add oil.
2. Add onions and cook for about 3 minutes.
3. Add all remaining vegetables and cook for 2 additional minutes.
4. Add hominy, stock, and Southwest Poblano spice. Simmer over medium heat for 5 minutes.
Suggestions
Serve with avocado, diced tomato, sliced radish, shredded
cabbage, or Cotija cheese
